Fluffy Greek Yogurt (toddler friendly no sugar added) Pancakes

Before becoming a mom, I was always interested in nutrition and strived to be creative with my food! After having our daughter and life only speeding ahead, I've had a hard time staying motivated to cook some days. Thankfully, these are easy and quick- they can also be baked in a sheet pan! Since my daughter started eating solids, she has LOVED my greek yogurt protein pancakes! I hope you like this recipe! Like and comment your thoughts.
Fluffy Greek Yogurt Pancakes
Ingredients:
1 cup AP flour
Pinch of salt (optional)
1 tsp baking powder
1 cup any greek yogurt (I use the a vanilla honey greek yogurt)
1/2 cup milk (any milk of choice)
2 eggs
1.5 tsp of vanilla extract
2 tbsp melted butter(unsalted)
1 tbsp of honey (optional if you already have honey in your greek yogurt)
Add 3/4 cup of a mashed fruit if you'd like- My daughter loves banana!
Directions:
1.) Mix all the ingredients above in a stand mixer or by hand.
2.) Spray your pan & heat!
3.) Once your pan is ready, scoop a half cup or so of the batter onto your heated pan and flip once the surface of the pancake begins to bubble.
BAKING:
1.) Preheat oven to 350 degrees & spray a 12 x 17 inch pan. (If using a bigger pan I would double the recipe)
2.) Complete mixing your ingredients and pour onto your pan.
3.) This is the fun part! Swirl in any jam to create a pretty design or just simply place your fruit on top of the batter.
3.) Place in the oven & bake for 20 minutes or until golden on top!
OPTIONS/TIPS
You can substitute any flour! Just be aware it can change the texture of your pancake, you may need to add more milk if your batter is thick.
I love adding 1/2 tsp of cinnamon to these pancakes!
